Cranberry Bacon & Brie Phyllo Cups

We did a progressive dinner with a few neighbors this past weekend and it was a hit! With a European theme going strong, I decide to make this appetizer! It was simple, easy to make for a crowd, and quite the hit! Who doesn’t love something that includes all or even just one of the ingredients? You might even find yourself walking around the party with a lighter step and your nose slightly more elevated in the air. In case you’re interested, I paired this with an Aperol spritz… because apparently I’m in complete denial that we’re in the middle winter. Enjoy!

Bacon Brie & Cranberry Phyllo Cups

Ingredients

  • 12 Phyllo sheets
  • 3 tbsp butter melted
  • 8 oz brie cut into small cubes
  • 8 oz bacon
  • 1/3 cup brown sugar
  • 1/2 cup craisins

Instructions

  • Preheat oven to 400 degF
  • Make bacon to your desired doneness, stopping halfway to sprinkle brown sugar over it to make it candied. Remove from oven and cut into small pieces less than 1" in size.
  • Lay out phyllo sheets over a dry space and use a glazing brush to distribute butter between every three sheets. It doesn't have to be perfect.
  • Stack sheets and cut them into even squares to fit the muffin tin. You should get 6 squares.
  • Separate the squares into portions of 4 sheets each to equal 24 total cups that are 4 layers thick
  • Grease the muffin tin with oil or butter and place each square of 4-layers in each tin.
  • Add brie, next cranberries, and finally bacon bits
  • Bake in oven for 12-15 minutes or until the dough is crunchy and golden brown.
