Thai Coconut Curry

This recipe is quite simple to pull off without having to head to the store. It’s also one that’s sure to impress your dinner guests, which at this point should be you and your family. So, though the bar is probably low, wow them anyway! Be sure to add curry paste to your next grocery list and give this recipe a try!

Thai Coconut Curry

Ingredients

  • 2 tbsp coconut oil
  • 1 onion chopped
  • 4 cloves garlic pressed
  • 1 lb chicken breast cut in 1in cubes
  • 1/2 cup fresh cilantro chopped
  • 2 tbsp green coconut curry paste I used Thai Kitchen
  • 1/2 tsp fresh or dried (ground) ginger
  • 1 can coconut milk I used Thai Kitchen
  • 1 lime juiced
  • 1 bunch scallions chopped

Instructions

  • Cook the chicken and coconut oil until chicken is light brown. Don't overcrowd the meat, or it won't brown
  • Add the onions, stir, and cook for a few minutes before adding the remaining ingredients except for the coconut milk and scallions
  • Cook for five minutes then add the coconut milk
  • Close the lid and let it simmer for about 5-10 minutes
  • Pour over your choice of rice noodles or jasmine rice
  • Top with chopped scallions and enjoy!
