Cook the chicken and coconut oil until chicken is light brown. Don't overcrowd the meat, or it won't brown
Add the onions, stir, and cook for a few minutes before adding the remaining ingredients except for the coconut milk and scallions
Cook for five minutes then add the coconut milk
Close the lid and let it simmer for about 5-10 minutes
Pour over your choice of rice noodles or jasmine rice
Top with chopped scallions and enjoy!
