Quick + Cozy Vegetable Chicken Noodle Soup
With fresh vegetables and herbs, this soup will leave you feeling cozy and sustained!
Servings: 6 servings
Ingredients
- 2 tablespoons extra-virgin olive oil
- 1/2 an onion small dice
- 1 large clove of garlic minced or pressed
- 4 carrots peeled and sliced
- 4 celery stalks sliced
- 2 cups green cabbage chopped into bite-size pieces
- 2 zucchinis cut into bite-size pieces
- 4 ounces dry noodles I used angel hair and broke them into small pieces
- 8 cups chicken stock
- 1/8 teaspoon ground cinnamon
- 1/4 cup fresh dill chopped
- Salt to taste.
- Half a teaspoon Black pepper
Instructions
- In a large pot over medium heat, sautƩ diced onion, and olive oil until they are soft and translucent. Keep stirring to avoid browning the onion or reduce heat to medium low.
- Add carrots, stir and sautƩ for another five minutes.
- Add celery and garlic, stir, and sautƩ for another five minutes.
- Add chicken stock, stir, and crack the lid to bring the soup to a light boil.
- Add the noodles and stir, cracking the lid while they cook for 2 to 3 minutes.
- Add the zucchini and cabbage, stir, and reduce the heat to low.
- Now you will add the dash of cinnamon, salt, and black pepper to taste.
- Wait until the very end to add the chicken so it does not get tough as it is already cooked.
- Leaving a small bit of dill for garnish/presentation, add fresh dill to the soup and stir.
