Quick + Cozy Vegetable Chicken Noodle Soup

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1/2 an onion small dice
  • 1 large clove of garlic minced or pressed
  • 4 carrots peeled and sliced
  • 4 celery stalks sliced
  • 2 cups green cabbage chopped into bite-size pieces
  • 2 zucchinis cut into bite-size pieces
  • 4 ounces dry noodles I used angel hair and broke them into small pieces
  • 8 cups chicken stock
  • 1/8 teaspoon ground cinnamon
  • 1/4 cup fresh dill chopped
  • Salt to taste.
  • Half a teaspoon Black pepper

Instructions

  • In a large pot over medium heat, sautĆ© diced onion, and olive oil until they are soft and translucent. Keep stirring to avoid browning the onion or reduce heat to medium low.
  • Add carrots, stir and sautĆ© for another five minutes.
  • Add celery and garlic, stir, and sautĆ© for another five minutes.
  • Add chicken stock, stir, and crack the lid to bring the soup to a light boil.
  • Add the noodles and stir, cracking the lid while they cook for 2 to 3 minutes.
  • Add the zucchini and cabbage, stir, and reduce the heat to low.
  • Now you will add the dash of cinnamon, salt, and black pepper to taste.
  • Wait until the very end to add the chicken so it does not get tough as it is already cooked.
  • Leaving a small bit of dill for garnish/presentation, add fresh dill to the soup and stir.
