Muy Delicioso Mexican Dip

Alright Everyone, it’s that time of year again; Superbowl Sunday!  You’ve just been invited to the typical potluck gathering and you’re stumped on what to bring… Do you bring the good ‘ole pigs in a blanket?  What about cheese and crackers?  If you want to spice it up and make a dish that’s fun, easy and positively delicious, your best bet is to make my homemade Mexican dip!

Ingredients:
– 1 can black olives
– 1 stalk green onions
– 8 oz shredded cheese (mild cheddar or Mexican Style)
– 6 oz salsa
– 16 oz refried beans
– 16 oz sour cream (reduced fat works just as well if you wanna cut out a few extra calories)
– 1 packet taco seasoning

Steps:
1. Spread out the refried beans evenly in a casserole dish
2. Create a second layer by spreading out the salsa evenly
3. Mix the sour cream and taco seasoning together in a separate bowl
4. Spread the sour cream and taco seasoning mix over the salsa delicately so the salsa doesn’t show through
5.  Dice the green onions into small, even pieces

6. Sprinkle the shredded cheese atop the sour cream
7. Evenly distribute the onions
8. Cut up the olives into even pieces and distribute evenly

As crazy as this is… that’s all for now folks!  This fun food is definitely an easy fix.
